Grillades and grits

yum y’all
Grillades (pronounced GREE-aoads) are bits of meat, slow cooked in a gravy base with vegs and spices. Think, cajun flavored pot roast only more like beef stew but not quite. Clear?
If you live Not In The South, you can use polenta instead of grits, same difference, really.

Grillades
3 pound chuck roast cut into 1 inch chunks
3 cloves garlic, minced
2 tsp cracked pepper
Toss the meat with the seasonings then toss it all with
1/4 cup flour
Get an oven proof skillet or a dutch oven good and hot with
1/4 cup vegetable oil in the bottom
Add the floured meat and brown it all over.
Take out the meat and put it aside in a bowl
Add some more oil back to the skillet and throw in
2 onions, chopped
1 bell pepper, chopped
2 stalks celery, diced
3 cloves garlic, minced
Yeah I know, sounds like alot of garlic, trust me y’all.
Cook the vegs until soft and put them inthe bowl with the meat
Add 1/4 more oil
and 1/4 flour
back into the skillet and make a roux (cook it, stirring well, until the flour browns) then add
1 quart beef stock and stir until the bits come up off the bottom of the skillet. Add
1/2 tsp dried thyme
2 teaspoons (more or less) tabasco sauce
salt to taste
Stir in the meat and vegs, cover, and put in a 250 degree oven (or a crock pot) and simmer for a long time
hours even. 3 or 4…hours oh yeah
THEN skim the fat off of it all as best you can. Feed that to the dog or throw it away. It’s nasty.
THEN
cut up a bunch of nice ripe tomatoes into bite sized pieces and add them in, cook for another hour but not much longer.
Salt and pepper to taste.
Now, serve on grits (or polenta) made like this (because I said so, and it’s tasty)
3 cups water, to a boil
1-1/2 cups half and half
1 teaspoon salt
1-1/4 cups grits
stir, simmer really really low temp for 30 minutes or so
taste and salt as needed.
glop into a bowl and spoon the grillades and gravy on top.
