Cheese coins (easier than cheesestraws because I’m lazy)

1 stick butter
2 cups finely shredded extra sharp cheddar cheese
1/2 tsp salt
1/2 tsp cayenne pepper
1-1/2 cups flour
set oven to 300 degrees, lightly grease and flour a cookie sheet.
In a food processor with a blade, process butter, cheese and seasonings until it’s a homogenous paste. Add the flour and process some more, until it’s all a smooth and stiff conglomeration. You’ll have to scrape the sides a couple of times. Dump the dough out and knead it a bit until it’s nice and smooth. Roll into a log about an inch in diameter and slice into 1/4 inch thick coins. Place on the cookie sheet and bake about 20 minutes until lightly brown. Put on a cloth to cool. Don’t let them cool on the cookie sheet as they’ll stick and fall apart. Then you’ll be forced to eat the bits, which, of course, are calorie free as you’ll probably be standing up, and we all know food eaten standing up, or in bits, have no calories. Right? RIGHT!

Add as much or as little cayenne as you like. I prefer them a bit spicy. I also intend to make a batch with a dash of liquid smoke, to see what happens.

O.M.G. I want to make those. How does one make them in “Straw” form?

you make sure the butter and cheese are at room temp, so the dough is very soft. Then you put it in a pastry bag and pipe them onto the cookie sheet. WAY more trouble than making the coins, IMO.

If I dropped the pepper, used mild cheddar, and substituted sesame oil for the butter, would the flavor overwhelm the oil, do ya think?

You could do that- just use a teeny dab of sesame oil (that’s a technical term- a dab is just a skosh more than a dribble)

what I mean is continue to use the butter, but add a dab of the sesame oil to it. Also, for the sake of consistancy, you need to use real butter, and not margarine.

Maybe if you sliced them a little thicker, it would work, or rolled it out in a thickish sheet and cut them into squares…
